Ingredients<\/strong><\/p>\n\n\n\n

1,5kg lamb shanks \u2013 sliced <\/p>\n\n\n\n

2 onions roughly chopped<\/p>\n\n\n\n

500g carrots peeled and roughly chopped<\/p>\n\n\n\n

2 sticks celery \u2013 roughly chopped<\/p>\n\n\n\n

3 medium sized rosemary sprigs \u2013 de stalked\nand finely chopped<\/p>\n\n\n\n

3 cloves crushed garlic<\/p>\n\n\n\n

2 tins whole peeled tomatoes roughly\nchopped<\/p>\n\n\n\n

6 medium to smallish sized potatoes(not\nbaby)<\/p>\n\n\n\n

2 handfulls green beans roughly chopped <\/p>\n\n\n\n

1 cup white wine \u2013 chenin blanc<\/p>\n\n\n\n

1 cup fresh cream <\/p>\n\n\n\n

2 tablespoons fresh chopped parsley<\/p>\n\n\n\n

1 punnet white mushrooms sliced<\/p>\n\n\n\n

\u00bc cup olive oil<\/p>\n\n\n\n

2 \u00bd teaspoons sea salt<\/p>\n\n\n\n

12 grinds of black pepper<\/p>\n\n\n\n

Lamb Potjie Ingredients<\/figcaption><\/figure>\n\n\n\n

Method<\/strong><\/p>\n\n\n\n

  1. Make a wood or charcoal fire,\nburn down the coals and place the potjie pot directly over a good bed of coals\ntill smoking hot (or use a gas burner, if you really have to!)<\/li>
  2. Season the lamb with 1 teaspoon\nof the salt<\/li>
  3. Add the olive oil to the pot,\nbrown the lamb in batches then remove<\/li>
  4. Fry the carrots and onions with\nanother teaspoon of the salt till well browned<\/li>
  5. Add the celery, garlic and\nrosemary and cook for 2 minutes<\/li>
  6. Add the wine, tomatoes &\nmeat, mix well, the potjie will not be stirred till the end after this step<\/li>
  7. Half submerge the potatoes into\nthe pot, season with the pepper and put the lid on <\/li>
  8. Once the pot has come to a\nsimmer remove most of the coals, it has to slowly cook now for 1 hour and 20\nminutes<\/li>
  9. Add the green beans, then the\nmushrooms on top of the green beans <\/li>
  10. Cook for a further 40 minutes\non low heat<\/li>
  11. Remove the potatoes, add the\ncream, bring to a simmer<\/li>
  12. Cut the potatoes into halves or\nquarters, add back into the potjie along with the chopped parsley and stir\ngently till everything is mixed together, taste and add the remaining half\nteaspoon of salt if needed to your preference <\/li><\/ol>\n\n\n\n
