Cake Ingredients:<\/strong><\/p>\n\n\n\n

1 tablespoon baking powder<\/p>\n\n\n\n

60 ml cocoa powder<\/p>\n\n\n\n

300g cake flour<\/p>\n\n\n\n

440g castor sugar<\/p>\n\n\n\n

1 teaspoon instant coffee<\/p>\n\n\n\n

1 cup milk<\/p>\n\n\n\n

4 eggs<\/p>\n\n\n\n

1 teaspoon vanilla essence<\/p>\n\n\n\n

250g butter<\/p>\n\n\n\n

  1. Cube the butter and melt in a\nsmall saucepan over low heat, remove from the heat and cool <\/li>
  2. Sieve the flour, baking powder,\ncocoa & coffee into a bowl, then add the castor sugar<\/li>
  3. Mix the eggs, vanilla essence\nand milk lightly together in another bowl with a whisk<\/li>
  4. Add the wet ingredients to the\ndry ingredients and beat for 2 minutes with an egg beater<\/li>
  5. Add the melted butter and mix\ntill just combined<\/li>
  6. Pour into a 24cm springform tin\nthat has been sprayed with baking spray<\/li>
  7. Bake at 175 to 180 degrees for\n50 min to 1 hour, depending on your oven. Test at 50 minutes with a cake tester\ninserted into the cake. When it comes out clean the cake is cooked. <\/li><\/ol>\n\n\n\n

    Chocolate Ganache<\/strong><\/p>\n\n\n\n

    300g chocolate chips, We use callebaut 54%,\nBourneville is a good substitute<\/p>\n\n\n\n

    200ml fresh cream<\/p>\n\n\n\n

    100g butter \u2013 cut into small cubes<\/p>\n\n\n\n

    100g Hazelnuts<\/p>\n\n\n\n

    1. Over a double boiler melt the\ncream and chocolate till just melted, remove from the heat<\/li>
    2. Add the cubed butter, whisk in\nthe butter till combined and shiny<\/li>
    3. Let the ganache cool till\nthickened and spreadable, can take up to a few hours if it is a warm day. Place\nin the refrigerator for a short period if needed to thicken up slightly <\/li>
    4. Roast the hazelnuts for 10\nminutes at 180 degrees, once cooled rub the skins off, remove the skins and\nchop roughly. Add the chopped hazelnuts to 1 cup of the ganache. This will fill\nthe inside of the cake<\/li><\/ol>\n\n\n\n

      To assemble the cake \u2013 once the cake has cooled, remove from the tin and slice in half. Place one layer on a cake stand and spread the nut and ganache mixture on this first layer, place another layer of the cake on top of this to sandwich the nut layer and spread the remaining ganache all over  the cake to completely cover<\/p>\n\n\n\n
